This is the Hillsboro General Store Cafe, a tiny restaurant located in the equally tiny town of Hillsboro. The town has a population of just over 120 and is a short drive from both Truth or Consequences and Hatch.

The exterior of the cafe has a nice hole-in-the-wall quality to it and you just might surprised by one detail: the building has been in continuous operation for 130 years. During its lifetime, the building has been the site of a general store, a telegraph office, and a stagecoach stop.

Inside, you’ll find the cafe still has evidence of its past, with antiques from the building’s past lives as well as souvenirs you can purchase to remember your visit.

But one of the restaurant’s main claims to fame are its green chile cheeseburgers! You’ll find a couple different versions: the large Super Delux Burger with 5oz of beef and the El Gordo, which is even larger at 8oz of beef with mushrooms and bacon.
